This is a simple potato salad that really packs a punch with strong mustard flavour. My sister in law Sandhya prepared this when I visited them. It is a lovely side dish and we particularly like it with cured salmon.
INGREDIENTS
800g all-purpose potatoes
100g red onion, peeled and finely chopped
2-4 green chillies, finely chopped
A generous handful of coriander leaves, finely chopped
45g mustard oil
15g extra virgin olive oil
Pinch of sugar
Salt to taste
METHOD
Boil potatoes in their skin until they are cooked. If you pierce a fork through, it should go in through the potato with little resistance. Once cool enough, peel and transfer to a pot.
Lightly mash potatoes with fork. Mix in the onions, coriander leaves, green chillies, salt and sugar.
Stir in the mustard oil and olive oil. Taste and adjust seasoning if needed. Serve at room temperature. Serves 4 -6.
