LENTILS STUFFED EGGPLANT

Lentils Stuffed Eggplant

This is my vegetarian take – the lamb version is popular in Spain as well as in Greece. You can make it vegan by using vegan cheese.

INGREDIENTS

2 eggplants, each weighing about 250 grams

3 tablespoons extra virgin olive oil

½ red pepper, finely diced

1 shallot, finely diced

1 garlic clove, peeled and finely chopped
