Eating oats daily can lower bad cholesterol because of the soluble fibre, help control high blood pressure and maintain your blood glucose level, all the while making you feel fuller for longer. That’s not too bad for one of the cheapest and most versatile grains on the supermarket shelf. I sometimes wonder why we don’t call this a super food.
INGREDIENTS
2 cups rolled oats
2 tablespoons chia seeds
1/3 cup of desiccated coconut
2 tablespoons raisins
1 teaspoon cinnamon powder
1 tablespoon of apple cider vinegar
½ cup apple sauce
300 to 400ml plant based milk like soy or almond milk
TOPPINGS
Grated apple or stewed apple or berry compote
Yoghurt
Toasted hazelnuts or almond slivers
METHOD
Combine all the ingredients (except the toppings) together in a bowl and stir well to combine. Cover the bowl and pop in refrigerator overnight.
When you are ready to serve, top with 1 scoop of yoghurt per serving, fruit and nuts to follow.
