Vegan Menemen

Menemen is a Turkish dish often made with eggs, tomatoes, green peppers, cured meats and spices. If you think you don’t like tofu, think again if prepared this way. It is very easy, rustic and quick. It is great to eat anytime of the day and serve it with Turkish Pide or steamed rice.

600 grams of tofu, drained

150 grams of onion finely chopped

200 grams green pepper finely diced

2 cloves of garlic minced

3 tomatoes, (blanched and skinned first) remove seeds and chop. Alternatively you can use 3 tinned Italian plum tomatoes

2 tablespoons cooking oil

2 teaspoons dried oregano

1 teaspoon hot paprika

1 teaspoon smoked paprika

½ to 1 teaspoon chilli flakes depending on how hot you like to eat

Salt to taste

METHOD

Heat oil in a large fry pan. When hot, fry the onions for three minutes. Add the garlic and tomatoes stir to combine. Let the tomatoes cook for three to four minutes. Add the dried oregano, paprika, chilli flakes and salt. Fry so everything is combined. After a minute add the green pepper, stir frying continuously for about a minute on high heat. Reduce heat to medium, add the tofu and break it up with your hands as you add. Give it a stir and once heated through (about three minutes or so), your menemen is ready to serve.

Cooking Tip: During summer I have added hot fresh green paprika and hot Chinese peppers. If you use these, you will have to adjust the hot paprika and chilli flakes accordingly. Serves 4
